New Lexies Bistro Opens at Ilumina on Raiders Way

Lexies Bistro, nestled within the vibrant Ilumina on Raiders Way community in West Henderson (3610 Sunridge Heights Pkwy, Henderson, NV 89052), will open this May, promising to redefine dining with a blend of international flavors, sustainable sourcing, and community-focused initiatives.

About Lexies Bistro

Executive Chef David Jones, previously of Jean Georges Steakhouse at ARIA Resort & Casino and Prime Steakhouse at Bellagio Hotel & Casino, along with Chef de Cuisine David Doyle, previously of Prime Steakhouse and Joël Robuchon at MGM Grand, has curated a celebration of Italian-American cuisine dedicated to using the freshest local produce and sustainable seafood. With prime grass-fed beef and imported goods from Italy, guests can indulge in rustic yet authentic flavors with every bite.

Featured dishes include:

Shrimp ceviche carpaccio with habanero, lime and blue corn
Sapori D’italia pizza with prosciutto, capicola and soppressata
B’s Smash Burger with American cheese and smash sauce
Mushroom “bolognese” with wild mushrooms and ricotta
Braised short rib with polenta, carrots, and pearl onions

An extensive beverage selection complements the menu, featuring classic wines from esteemed vineyards, local beers, and handcrafted cocktails infused with fresh seasonal herbs sourced from the on-site garden.

“Lexies Bistro is more than just a restaurant, it’s a dream turned into reality, fueled by passion and a deep love of creating memorable experiences through food and we are excited to bring this concept to the West Henderson community,” Founder and Owner Winnie Schulman said. “It’s a beautiful area and a great amenity for Ilumina. Our focus on sustainability, local sourcing, and scratch cooking ensures that every dish is not only delicious but also mindful of our environment and community.”

A 1900-square-foot patio provides picturesque poolside views and lush garden seating, along with fire pits. Lexie’s Bistro will also feature 15 video slots/poker machines for added entertainment, as well as a private dining room called Lexie’s Hideaway, ideal for hosting private events and gatherings.

Lexies Bistro will be open daily from 11 a.m. to 11 p.m.
