Pancho’s Mexican Restaurant Celebrates Valentine’s Day

Pancho’s Mexican Restaurant, located in Downtown Summerlin, will say “te amo” to tequila with a massive margarita, available exclusively on Valentine’s Day, Friday, Feb. 14.

Taken or single, guests may enjoy the “It Takes Two to Tequila,” a 39-ounce strawberry margarita for two, made with Campo Azul Reposado, house lemon-lime mix, triple sec, and strawberry syrup, priced at $26.

Modeled after a classic Mexican hacienda, Pancho’s romantic décor will set the date night mood with colorful Mexican tiles, stained glass windows, lush greenery, and a cascading, oversized fountain. Featured dishes will include Camarones a la Diabla, sautéed shrimp cooked with caramelized onions and roasted garlic, simmered in a special Diablo sauce with roasted Guajillo chiles and Chef Ramon’s special herbs; pollo asado, boneless breasts of chicken marinated with achiote, garlic, and special Mexican herbs, served with an enchilada, Mexican-style rice and beans; and carne asada a la Ab, thin charbroiled flat iron steak served with a cheese enchilada, guacamole, sour cream, pico de dallo and Mexican-style rice and beans.
