Panchos Mexican Restaurant Spices up New Year’s Eve/Day 2024

Panchos Mexican Restaurant, located in Downtown Summerlin, will start the new year with a spicy bloody maria to celebrate the arrival of 2024, available Sunday, Dec. 31, and Monday, Jan. 1.

Available for New Year’s Eve and New Year’s Day, which is also celebrated as National Bloody Mary, Pancho’s spicy bloody maria is a celebration of one the most popular cocktails with an over-the-top nod to Las Vegas and some extra heat in honor of the restaurant’s Mexican flair.  A twist on a traditional bloody mary, the bloody maria is crafted with tequila, house bloody mary mix, lemon juice, Worcestershire, and Tapatío hot sauces. Served in a poco grande glass with a Tajín rim, it is garnished with two pimento-stuffed olives and a fresh jalapeno pepper.

On New Year’s Eve, Sunday, Dec. 31, guests can pair the bloody maria with one of Pancho’s’ popular brunch selections such as the huevos a la diabla, scrambled eggs topped with a mild diabla sauce and served with oven roast potatoes; or the ultimate breakfast burrito, scrambled eggs with diced ham, potatoes, onions, chiles and tomatoes stuffed inside a warm flour tortilla topped with a signature Spanish sauce; among other selections.

On Monday, Jan. 1, guests can pair their bloody maria with a variety of Mexican-style dishes including the taquitos Dorado, five crispy taquitos filled with beef or chicken as well as a variety of chimichangas and enchiladas.

The popular hacienda-style restaurant also offers a Cantina Happy Hour featuring discounts on select appetizers and drink specials, including $3 off house and flavored margaritas, $3 off well cocktails, and $3 off house wines. Happy Hour occurs from 2 to 7 p.m. Monday through Friday and 11 a.m. to 7 p.m. Saturdays and Sundays. Pancho’s also hosts Tequila Sundays which takes place every Sunday from 3 p.m. to close, where guests can enjoy 50% off all tequila pours with over 40 brands of tequila to choose from.

Restaurant History

Pancho’s Mexican Restaurant is an established name in Southern California and one of the oldest and best-known landmarks in the Los Angeles area. Owned by the Sampson family starting in 1945, the property came under the ownership of current owner E. Abbott Lawrence and his family in May 1976. Since then, Lawrence has created a thriving business in the Manhattan Beach location. Following the success of the Manhattan Beach restaurant, Lawrence expanded the family-owned business to Las Vegas. Pancho’s opened in the Downtown Summerlin shopping center in September 2015.

Meet the Lawrence family

Founder of Pancho’s and patriarch of the Lawrence family, E. Abbott Lawrence has nearly 40 years of experience in the restaurant business. In 1977, Lawrence built Pancho’s, a Mexican restaurant located in North Manhattan Beach on the corner of Rosecrans and Highland. With its expansive, authentic Mexican menu and delicious hand-made margaritas, Pancho’s quickly became a South Bay landmark.

“When Pancho’s originally opened in Manhattan Beach, it became, and has remained, a favorite hangout for locals,” says E. Abbott Lawrence. “We chose Downtown Summerlin for the location of our second restaurant to bring that same experience to our new neighbors; a place where families and friends can get together and have a great time while enjoying a delicious meal in a beautiful atmosphere.”

Working in Pancho’s Manhattan Beach as teenagers, sons Adam Lawrence and Abbott Lawrence, Jr. realized their love for the business and pursued degrees in hospitality at universities in Arizona. Following in their father’s footsteps, Adam and Abbott have taken the helm as the new business owners of Pancho’s in Las Vegas.
