Hogsalt Hospitality’s Bavette’s Steakhouse & Bar has debuted as part of the rebirth of Monte Carlo into Park MGM.

Like its beloved Chicago sibling — feted by Esquire, Food & Wine, and Zagat, and annointed by Andrew Harper as one of the best steakhouses in the world — the new Bavette’s reimagines the whole genre. Glowing chandeliers, sultry jazz, rich woods, red banquettes, and a mix of vintage art and murals by acclaimed artist David Plunkert, all transport guests to an intimate space that pays homage to Gilded Age opulence.

A dash of French flair transforms time-honored steakhouse traditions such as multi-tiered seafood towers, dry-aged bone-in ribeyes, and zestfully seasoned lamb chops, all mouthwateringly prepared and impeccably served. Side dishes, like the bacon, which is served thick-cut and gleaming under a sinful maple syrup glaze, manage the trick of seeming both familiar and all-new. Desserts lean toward decadent, with a Hot Fudge Sundae Royale accompanied by a buffet of candy toppings, a silky Chocolate Cream pie with an Oreo crust, and a classic Lemon-Meringue Pie.

Bavette’s speakeasy roots show in a curated cocktail program punctuated by four Old Fashioneds, each with a different base: Hibiki Tokyo, Hardy Cognac, Belle Meade and Old Overholt. Expertly mixed manhattans, sazeracs, gimlets, and martinis continue to remind us why these classics became classics in the first place. In the back of Bavette’s, a hidden parlor bar awaits guests who want to begin their evening early, or let it run late, exploring the cornucopia of cocktails.

Hogsalt’s commitment to extraordinary food and genuine hospitality has yielded more than a dozen renowned establishments, including Gilt Bar, Doughnut Vault, Maude’s Liquor Bar and Au Cheval, an upscale diner praised by both Bon Appetit and Conde Nast Traveler for serving one of the country’s best burgers.

Along with The NoMad Las Vegas, Park MGM is one of two distinct hotel experiences set to debut in what has quickly become The Strip’s most magnetic neighborhood. Partners MGM Resorts and Sydell Group are in the process of transforming every element of Monte Carlo Resort & Casino to create the new destination, with the official rebrand of Park MGM slated for the first half of 2018.
