La Cave Wine and Food has been the quiet standout inside Wynn Las Vegas since 2010, the year the Morton Group, led by restaurateurs Michael and Jenna Morton, decided the Strip needed a place where wine came first and everything else, food, music, mood, was built to support it. The 3,000-square-foot space reads less like a restaurant and more like a vintner’s private tasting room, dim and warm, with the kind of layout that works equally well for two people splitting a bottle as it does for a party of two hundred.

The wine list is the real draw here, and it’s a serious one: 250 bottles and fifty wines by the glass, sourced from boutique producers around the world rather than the predictable big-label names most hotel restaurants lean on. Haute Living once called it one of the things Las Vegas needed more of, and the Wine Spectator Award of Excellence it picked up in 2014 backs that up. What makes it work for a wider audience, though, is that the staff treats a curious first-timer with the same attention as a serious collector. Nobody gets talked down to over a wine list this deep, and that’s rarer on the Strip than it should be.

Food plays a supporting role, but it’s a well-executed one. Corporate executive chef William DeMarco built an American small-plates menu that pulls from the sea, the farm, the garden, the oven, and the grill, designed from the ground up for pairing rather than as an afterthought to the bottle list. The butler-style format means smaller party sizes move through in timed seatings, and walk-ins during peak brunch hours often face a wait. Dinner reservations aren’t strictly required midweek, but Friday and Saturday nights fill up fast given the hotel’s foot traffic.

Dress code leans resort-casual to upscale, in line with the rest of Wynn’s dining scene. Jeans are fine as long as they’re paired with something a step above a t-shirt, and a lot of guests dress it up a bit more for dinner, since La Cave often doubles as a date-night or pre-show stop. If a wine tasting or a longer multi-course pairing is the goal, going a little earlier in the evening, before the pre-theater dinner rush hits around 7 or 8 p.m., means more time with the sommelier and a quieter room to actually taste through the list.

Parking is available at Wynn Las Vegas through either self-parking or valet; valet drops closest to the main dining promenade where La Cave sits, which is the more direct route if arriving right before a reservation.
