Cipriani Las Vegas sits inside Wynn Plaza Shops at Wynn Las Vegas, and it is the closest thing the Strip has to an actual reservation in Venice. This is Cipriani’s first restaurant on the West Coast, which means the brand’s entire century of pedigree landed on the Strip in one build. The name traces back to 1931, when a bartender named Giuseppe Cipriani loaned a struggling regular, Harry Pickering, enough money to get back on his feet.
Pickering repaid him, and together they opened Harry’s Bar in Venice, a room so influential that Italy’s Ministry of Cultural Arts later named it a national cultural landmark. That bar is also where Giuseppe Cipriani invented two dishes most people order without knowing their origin story: Carpaccio and the Bellini, a blend of Prosecco and white peach puree named for the painter Giovanni Bellini.
Three generations later, the Cipriani family runs an international hospitality brand with restaurants and hotels in Venice, New York, Miami, Monte Carlo, Hong Kong, Dubai, and now Las Vegas. Giuseppe Cipriani, grandson of the founder, has said the goal in Las Vegas is the same one his family has followed since 1931: “to serve is first to love.” That phrase shows up in the pacing of the room as much as in the menu. Servers move with the kind of unhurried confidence that only comes from decades of repetition, and the restaurant is built to slow guests down rather than move them through.
Florentine architect Michele Bonan designed the space, and it reads more like a private yacht club than a casino restaurant. Glossy walnut paneling, chrome accents, and terrazzo floors give it a nautical polish, while black and white photographs of Cindy Crawford, Claudia Schiffer, and Naomi Campbell, shot by Marco Glaviano, line the walls in the kind of understated glamour Cipriani has traded on for generations. A separate private dining room handles anniversaries, proposals, and business dinners that need a door that closes.
The menu leans on dishes that made the brand famous in the first place: Carpaccio alla Cipriani sliced tissue thin, baked tagliolini with ham, Chilean sea bass alla Carlina with rice pilaf, and homemade potato gnocchi al Gorgonzola. Desserts close things out properly with vanilla meringue, tiramisu, and vanilla ice cream made a la minute at the table.
Then there is the dish that never makes it onto a printed menu at all. Regulars know to ask their server for the signature pink sauce, a creamy tomato blend served over pillow soft ricotta gnocchi or rigatoni. The restaurant sits inside Wynn Plaza Shops, tucked between the resort’s retail corridor and its main casino floor, which makes it an easy stop before or after a show without needing to leave the property. Valet at Wynn is the simplest way in if you are driving, since the walk from self parking through the casino floor takes longer than most people expect on a night when they are already dressed up.
Dress code leans upscale casual to dressy, in keeping with the room’s yacht club polish. Jeans are generally fine if they are the nicer end of your closet, but flip flops, athletic wear, and beachwear will feel out of place against the terrazzo floors and walnut paneling.
