Veganuary Kicks Off Its 3rd Year in Las Vegas with 30+ Restaurants

This month, it’s easier than ever for people to go vegan. For the third consecutive year, Veganuary presented by Vegans, Baby returns to Sin City while launching in two new cities – San Diego, CA and Portland, OR.

With the goal of making vegan life accessible and approachable, Vegans, Baby’s monthlong celebration features restaurants offering special vegan menus designed to give vegan and vegan-curious diners the opportunity to get to know chefs and restaurants, and for restaurants to learn more about the vegan demand and expand their options.

More than 30 Las Vegas restaurants are participating including The Heavenly Vegan, Border Grill, Mott 32, Naked City Pizza Express and Tacotarian. Special menu offerings include:

Heavenly Vegan: Gluten and Soy-Free Heavenly Quiche; Raw Manicotti; Carrot Cake Pancakes; and Baked Lentil Walnut Cauliflower Taco Salad Bowl

Border Grill: Spanish Root Vegetable Tamale; Spicy Beef Nachos; Argentinian Beef Empanadas; Rainbow Cauliflower Tacos; Vegan Relleno; Smoked Tofu Enchiladas; and Mexican Chocolate Sorbet

Mott 32: 雜菌素菜春卷 (wild mushroom, vegetable spring roll); 黑松露野菌生菜包 (assorted wild mushroom in lettuce cup, black truffle sauce); 銀杏馬蹄炒蘆筍 (sautéed asparagus, water chestnuts, ginkgo nuts); 紅燒豆腐 (braised tofu, seasonal mushroom); and 炒上海麵(雜菜) (stir-fried Shanghainese noodle with vegetables)

Naked City: Vegan Sub; Vegan Garlic Buns; and Vegan Pulled Pork Pizza

Tacotarian: Tacos de Nopal; Tostada Pibil; Queso Fundido; Lychee Ceviche; and Apple Empanada

Last year’s vegan dining month dining month had more than 30 participating restaurants who sold over 6,000 vegan dishes, raising upwards of $6,700 for local non-profit organizations. For 2020, every participating restaurant will be donating a portion of the proceeds to local animal rescue, A Home 4 Spot and the international Veganuary organization.

Now in his third year of participating in Veganuary Las Vegas, Border Grill’s Executive Chef Mike Minor said: “I enjoy participating in Veganuary because it challenges me as a chef. I especially love getting meat lovers to try our vegan dishes and thinking that they’re eating non-plant-based food. I’m shocked at the amazing feedback we’ve gotten over the years from vegans and non-vegans alike. Plus, it’s important to me personally and in line with Border Grill’s sustainability values to reduce our collective carbon footprint and overall impact on the environment.”
