“Vegas Strong” may just be a phrase to some, but to Route 91 survivors Brian & Natalia Buechner, it’s a way of life. Today the couple celebrated the Grand Opening of their second Big B’s Texas BBQ, on Ft. Apache Rd. in Southwest Las Vegas.

Inspired by the BBQ shops that Brian Buechner grew up with, Big B’s Texas BBQ takes the traditions of Hill Country BBQ seriously, using Texas mesquite and oak wood that they personally import from the Lone State. In addition to Texan-favored beef brisket and hot links, Big B’s also smokes California-style tri-tip, and Southern-style pork as well as chicken and turkey and serves a full array of classic side dishes.

“We wanted to do this right and not cut any corners,” says Brian.

Joining the original Big B’s on St. Rose Parkway in Henderson (which seats 175 in a barnlike open space), the new Big B’s on Ft. Apache Rd & I-215 seats 160 in a redesigned restaurant space featuring Texas insignias and memorabilia, offering several inviting options. The main room seats about 50 guests, including a full bar and a semi-secluded massive 20-seat picnic table hand built by Brian. The North room seats 100, with multiple screens to show sports (Texas teams, if they are playing). The outdoor covered patio seats up to 40 additional guests, weather permitting.

Texas-style BBQ is considered “purist BBQ,” as the Buechners will tell you, starting with quality meats, using a simple dry rub (never brining or injecting) and smoking “low and slow” for long hours. Meats are never pre-sauced, they are carved on demand and served on butcher paper,

“Every brisket is different,” says Natalia, “and deserves its own attention.”

About Big B’s Texas BBQ

Big B’s Texas BBQ is the dream of Brian Buechner, 20 year resident of Las Vegas, who moved from Texas to work in the world of Strip hospitality with MGM resorts. Although not a trained chef, Buechner missed the traditional hill country BBQ of his native state so much that he began cooking it in his backyard just for friends. After meeting and marrying Natalia, who emigrated from Estonia, the couple decided to make the dream come true, opening the first Big B’s Texas BBQ on St. Rose Parkway in Henderson January 2016.

Big B’s uses genuine Texas mesquite and oak to smoke not only Texas-style brisket and hot links but also California-style tri-tip, pork, chicken and turkey, and offers all the traditional trimmings from barbecue beans to banana pudding. The second Big B’s Texas BBQ opened in 2019 on Ft. Apache Rd in Southwest Las Vegas. Says Brian, “We are happy to be a part of the growing BBQ community in Las Vegas.”
